An air fryer is a small countertop convection oven that simulates deep frying without the need for oil. A high-speed fan circulates hot air, producing a crisp coating by browning reactions like the Maillard reaction. Air fryers cook food that would otherwise be submerged in oil by circulating hot air. Traditional Frying Methods
By totally submerging items in heated oil, considerably above the boiling point of water, traditional frying methods cause the Maillard effect at temperatures of 140 to 165 °C (284 to 329 °F). The air fryer works by coating the food in a thin film of oil and circulating air at up to 200 degrees Celsius (392 degrees Fahrenheit) to provide enough heat to initiate the reaction. The equipment uses 70 percent to 80 percent less oil than a deep fryer to brown things like potato chips, poultry, fish, steak, cheeseburgers, french fries, and pastries.
Temperature and timer adjustments are available on most air fryers, allowing for more exact cooking. Typically, food is cooked in a basket on a drip tray. The basket must be stirred on a regular basis, either manually or by the fryer mechanism. Convection ovens and air fryers cook food in similar ways, however air fryers are typically smaller and produce less heat.
Because the larger amount of oil used in traditional frying penetrates the foods (or the coating batter, if it is employed) and adds its own flavor, the taste and consistency of air-fried foods are not comparable to those of traditionally fried items.
